Last fall, on Nov. 13, 2012, more than 30 Union County residents gathered at the Seventh-day Adventist Better Living Center in Murphy, N.C., to enjoy samples of vegetarian and vegan foods, as well as watch demonstrations on how to create delicious and healthy recipes.

Ron Westfall, a physical therapist and local resident, included information about foods and the reasons to eat healthier while several cooks demonstrated how to make different dishes. The recipes given to each participant encouraged using whole, unprocessed foods, grains, legumes, and plenty of fruits and vegetables.
